Ingredients You Will Need:

  • 1 liter full-fat milk (for making fresh curd)
  • ½ tablespoon curd (as starter culture)
  • 2 ripe Dasheri mangoes (or any sweet variety)
  • 6 tablespoons sugar (adjust to taste)
  • 3 tablespoons fresh cream
  • A few saffron strands (soaked in warm milk)
  • Chopped almonds (optional)
  • Cardamom powder (optional)

Step 1: Preparing the Fresh Curd

So let’s make Mango Mishri Khand Shrikhand, first of all I have taken 1 liter of lukewarm milk, I have heated it and cooled it down. Now add half a tbsp of curd in it and then whisk the curd well, just put the lid on and let it rest one day before night and you know how to make curd.

We will remove it and in the end if we do n’t mix it perfectly, then after adding curd, lift the cloth and then we have to remove the extra water from it with light hands. So that more water comes out otherwise what happens is that the water level in the bowl gets filled and then there is a risk of the curd becoming sweet you can also see.

I squeezed it for two minutes and one to one and a half cups of water came out of it. This much more water will come out later by the way, this curry is made very well with water. So I am saving this right now. I placed my stand on the bowl, on the strainer inside the curd or cloth and then placed a small plate on top of it, this will balance the weight and now place a little weight on this plate.

Ater making this setup we will keep it in the fridge for at least four hours. What happens in four hours, the good water will come out from it and curd will be made exactly like paneer in this. I have taken mango for mango shake hand, we will cut it and whatever mixture of it will be put in a mixer jar. I have used the Dasheri fruit, its sweetness is very good.

Along with this I will also add six tbsp of sugar, one third of which is around 120 grams. Grind both of them and make a very smooth paste. If there are lumps left, the paste will not turn out well. Shrikhand should be very smooth and creamy.

So, let’s start the work of ShriKhand. I removed the weight from the plate. It looks exactly like paneer. See how much water has come out. Take it out. It is prepared perfectly. Whatever is stuck to the cloth, take it out. is So, it will take some effort to mix it. So, not all of it, I took it out on a plate.

Now, the particle size of it, the grains, their size has to be reduced. So, first of all, you can start with a spoon. You can start by stirring here. But the best way is to do it by hand. So, I mixed it with a spoon for two minutes, so that it becomes a little soft. After that, we will add cream to it. I have taken three tbsp of cream.

Use the cream of fresh milk. This will give a good result and now we will start kneading it by hand, there is more control in doing it by hand. You should knead the curd for at least 5 minutes, it should become completely smooth. There is no place in the cloth where the curd dries up too much, if more water is released then it forms lumps.

So mash it well with your hand, by doing this, just like we add ingredients in this cream to make whipped cream, in the same way it starts to get a solid texture. I have also done everything special, now you can see what texture has come.

Now we will add mango puree in it, this is a medium sized tomato puree, it also has sugar. After adding this, we will start mixing, add curd and mango in it. You can also add nuts. After mixing mango paste, I will add mango and almonds in it. I started cutting the almonds into small pieces, making lines and then we will scrape it with a spoon.

So that it becomes very small and secure from the back. From this you get complete Shrikhand Kailash bites. So you must add kaya and for color I have mixed some threads of saffron in hot milk. I crushed it and then it gives both flavor and color. You can also add cardamom powder to it. I don’t like mangoes in Shrikhand, so I did not add it, it is fun to make it at home simple and easy.

Step 5: Chill and Serve

Let’s mix all of it and then cool it for at least four hours. I am taking out this mixture in a bowl and then we will keep it in the fridge. After four to five hours when it is completely cooked, then it also starts to rise. You will get the best result but the weight is less.

After four hours take a take out from out of the fridge and the architecture is ready. If you cool it further, it tastes more delicious. I am putting it in a bowl right now to enjoy. I have also added some nuts on top and mango seeds as well.
